Ingredients

For the cake:

  • 175g margarine
  • 175g caster sugar
  • 3 medium eggs
  • 175g self-raising flour
  • 1 teaspoon baking powder
  • Zest and juice of 2 lemons

For the drizzle:

  • 70g caster sugar
  • Juice of 1/2 large lemon

How To Cook Lemon Drizzle Cake In The Air Fryer

Preheat your air fryer to 160C/320F for 5 minutes.

In a large bowl, cream the margarine and caster sugar until light and fluffy.

Add the eggs one at a time, mixing well after each egg.

Stir in the lemon zest and juice.

Sift in the flour and baking powder, folding gently.

Pour the batter into a greased and lined cake tin.

Place the tin/silicon mould in the air fryer basket and cook for 25 minutes.

After 15 minutes, carefully cover the cake with foil to prevent over-browning. To secure it tuck under the tin/mould.

Check for doneness with a skewer/toothpick. If needed, cook longer at 5-minute intervals until the skewer comes out clean.

While the cake is cooking, mix the drizzle ingredients.

Once the cake is done, remove it from the air fryer and poke holes all over the top with a skewer.

Pour the drizzle over the warm cake, allowing it to soak in.

Cool the cake for 10 minutes then transfer to a wire rack.

Dust with icing sugar before serving.
