What Are Sopapillas?

Sopapillas are Mexican pastries that are crispy on the outside and soft on the inside.

These golden pillows of deliciousness are made from a simple dough that is air-fried until it puffs up, resulting in a light and airy texture.

Sopapillas are dusted with icing sugar and can be served as a dessert or even enjoyed as a sweet snack.

They are served warm and can be enjoyed plain, drizzled with honey, or with a scoop of ice cream.

Sopapillas are a popular treat in Mexican cuisine and are loved for their comforting taste and delightful texture.

Makes approx 12 depending on size

  • 125g plain flour
  • 1 1/2 tbsp baking powder
  • 1/2 tsp salt
  • 1 tbsp granulated sugar
  • 1 tbsp unsalted butter, melted
  • 80ml warm water
  • Cooking spray

Sugar Coating

  • 50g sugar or sweetener
  • 1 tbsp ground cinnamon
  • 1 tbsp butter

How To Make Air Fryer Sopapillas

  • Combine the plain flour, baking powder, salt, and granulated sugar in a mixing bowl. Mix well.
  • Add the melted butter to the dry ingredients and mix until the mixture resembles coarse crumbs.
  • Gradually add the warm water, a little at a time, and mix until the dough comes together. It should be soft and slightly sticky.
  • Transfer the dough to a lightly floured surface and knead it for a few minutes until it becomes smooth. Let rest for 15 minutes.
  • Divide the dough into small portions and roll each portion into a thin circle, approximately 1/8 inch thick.
  • Preheat your air fryer to 190C / 380F.
  • Lightly spray the air fryer basket with cooking spray to prevent sticking.
  • Place the rolled dough circles in a single layer in the air fryer basket, ensuring they do not overlap.
  • Cook the sopapillas in the air fryer for 5-7 minutes, or until they turn golden brown and puff up.
  • Repeat the process with the remaining dough portions until all sopapillas are cooked.
  • Remove the sopapillas from the air fryer. In a small bowl, combine the sugar and cinnamon. Brush the sopapillas with butter and sprinkle with the cinnamon sugar mixture.

Serving suggestions

Once your air fryer sopapillas are ready, it’s time to enjoy them!

Here are a few serving suggestions:

  • Serve warm sopapillas with a drizzle of honey and a dusting of icing sugar.
  • Try them with a scoop of vanilla ice cream or a dollop of whipped cream.
  • Get creative with toppings by adding fresh fruit, such as sliced strawberries or a sprinkle of grated chocolate.
  • Fill the sopapillas with your favourite taco fillings, like minced beef, salsa, cheese, and sour cream for a savoury twist.

How to Store Air Fryer Sopapillas

Sopapillas are at their best when fresh, as their crispiness and texture tend to diminish over time.

If you want to store your sopapillas in an airtight container at room temperature, they will stay in good condition for approximately 2-3 days.

While they will still be edible, it’s worth noting that they might not retain the same level of crispiness and fluffiness as if freshly made.

I would recommend eating them straight away for the best result.

How To Reheat Air Fryer Sopapillas

Place the sopapillas in the air fryer, do not overlap.

Air Fry at 170C / 350F for 2-3 minutes. Check frequently and add more time if necessary.

Once reheated coat them with the cinnamon sugar if you desire.

Can You Freeze Air Fryer Sopapillas?

Placed in a suitable freezer container or bag they will last approximately 3 months.

To reheat: thaw first then air fry at 170C / 350F for 5 minutes. Turn halfway through cooking time.

Tres Leches Cupcakes

3 Milk Cupcakes

air fryer tres leches cupcakes

Tres Leches Cupcakes are the perfect balance of light, airy cake and rich, creamy goodness.

Learn about the origins of Tres Leches cake.

The cupcakes are soaked in a mixture of evaporated milk, condensed milk, and double cream, infusing them with incredible moisture and flavour.

Topped with a fluffy whipped cream frosting, these cupcakes are a heavenly delight you won’t be able to resist.

Makes Approx 12

Cupcake Batter

  • 175g plain flour
  • 1½ tsp baking powder
  • ¼ tsp salt
  • 100g unsalted butter, softened
  • 150g granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 120ml full-fat milk

Milk Mixture

  • 170ml evaporated milk
  • 170ml sweetened condensed milk
  • 170ml double cream

Whipped Cream Frosting

  • 300ml double cream
  • 3 tbsp icing sugar
  • 1 tsp vanilla extract

How To Cook Air Fryer Tres Leches Cupcakes

Preheat your air fryer to 160°C / 320°F and line a cupcake tin suitable for your air fryer with paper liners.

This will ensure that your cupcakes bake evenly and prevent them from sticking to the pan.

In a bowl, whisk together the plain flour, baking powder, and salt. Set aside.

In a separate large bowl, cream the softened butter and granulated sugar until light and fluffy.

Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Gradually add the dry ingredients to the butter mixture, alternating with the milk. Mix until just combined, being careful not to overmix.

Divide the cupcake batter evenly among the prepared liners, filling each about two-thirds full.

This will allow room for the cupcakes to rise while baking.

Place the cupcake tin in the preheated oven and bake for approximately 18-20 minutes, or until a toothpick inserted into the centre of a cupcake comes out clean.

Remove from the oven and let the cupcakes cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

While the cupcakes are still warm, poke several holes in the top of each cupcake using a toothpick or skewer.

In a bowl, combine the evaporated milk, sweetened condensed milk, and double cream. Slowly pour the milk mixture over the cupcakes, allowing it to absorb into the cake.

It may seem like a lot of liquid, but don’t worry, the cupcakes will soak it all up!

In a bowl, whip the double cream, icing sugar, and vanilla extract until soft peaks form. Be careful not to overwhip, as the cream can quickly become stiff and grainy.

Once the cupcakes have cooled completely and soaked up the milk mixture, it’s time to frost them with the whipped cream frosting.

Use a piping bag or spread the frosting on top of each cupcake using a spatula. Get creative with your frosting technique for an extra touch of elegance!

Once the mixture is boiling, reduce the heat to low.

Remove the saucepan from the heat and transfer the dough to a large bowl. Let it cool for about 5 minutes.

Add the eggs and vanilla extract to the dough. Beat the mixture until all the ingredients are fully combined.

Transfer the dough to a piping bag with a star tip or a large resealable plastic bag with one of the corners cut off.

Pipe the churros into 4-inch pieces.

With cooking spray, spray a tray that will fit in your refrigerator.

Pipe the churro dough onto the tray, using scissors or a paring knife to cut each piece from the piping bag.

Place the tray in the refrigerator for 1 hour to allow the churros to set.

How To Air Fry Churros

Once preheated carefully transfer the churros from the tray into the air fryer.

Be sure to leave space between each churro. Spray with cooking oil.

The dough can be prepared ahead of time and stored in the fridge for up to a day. Let it come to room temperature before piping and air frying.

Churros can be frozen for up to a month. To reheat, place them in the Air Fryer at 190C / 380F for about 5 minutes, or until heated through and crispy.

Coating the Churros with cooking spray before air frying can help to make them crispier. Also, preheat the air fryer and use the right temperature and time settings for even cooking.

You can use a different type of natural sweetener, such as agave or stevia, but be sure to adjust the amount to taste.
