Ingredients
This recipe can make around 12 to 15 Welshcakes, depending on the size of the cookie cutter or glass used to cut out the dough circles.
Adjust the size and thickness to make more or fewer cakes.
- 225g self-raising flour
- 75g caster sugar
- 100g unsalted butter, diced into small pieces
- 50g currants or sultanas
- 1 medium egg, beaten
- 1/2 teaspoon mixed spice
- Zest of 1 lemon
- A pinch of salt

How To Cook Welsh Cakes In The Air Fryer
Start by preheating your air fryer to 180C/360F.
Line the air fryer basket(s) with parchment paper liners or lightly grease it with oil spray to prevent the Welsh cakes from sticking.
